Wednesday!!

Well its finally the middle of the week, its about time. This week has been dragging by so slowly. I will be glad when Friday is here even though I have to work. The kids first day at the new school went ok. Mikey had a blast, he said he already met new friends. Oh and he has 4 teachers! They have rotations for math, reading and other subjects.. not to mention fine arts. Lexi said her day was ok, she was almost in tears! She said some girl that is in her math class yelled in her face at recess. And she doesn't even know what it was about. I asked her how new kids at her old school were treated and she said some kids would be mean to the new kids but eventually they would be nice to each other. I told her you just be you, be nice and polite and people who are timid of you will come around when they see what a nice person you are. I did tell her for the time being just avoid the mean girl. She says she already has made a few new friends. One which lives in our apartments and they ride the bus together. I think they will be fine, it just takes some time adjusting. I'm now glad we moved them to the new school now that way next year they will already have some friends and it won't be so scary going to a new school on the first day.

They also had a great second day of school. Lexi told me she didn't shake one bit on tuesday. She said Monday she was shaking like a leaf for several hours because she was so nervous. Mikey told me he has made some more friends and possibly a girlfriend. Just what he needs, ha.

I was off yesterday and got some much needed cleaning done and cooked dinner. We had beef tips and noodles and I fixed it in the crock pot. Here is my recipe.

1 lb. stew meat
1 can beef broth
1 lg sliced onion
1 pkg. sliced mushrooms
1 pkg egg noodles
2-3 pkg of brown gravy mix

Start by adding your stew meat and can of beef broth in the crockpot. Also use the beef broth can and had half water. Next place your mushrooms and onions on top. Put the lid on and let cook on high. After it had cooked for about 4 hours I did remove the lid and stir so the veggies could sink into the broth. I continued cooking on high for 4 more hours. About 30 mins before it was done cooking I added in the brown gravy mix, to do this I took a small bowl and added about 1.5cup of water and added the mix and whisked it to get a good mix, no lumps. I then poured it into the crockpot and gave it a stir. It cooked for 30 more minutes so the gravy could thicken up.
The noodles I fixed on the stovetop with the package directions. It was such a delicious meal. I will be making this one again and again. My family loved it. Everyone ate it and liked it although Lexi did pick out onions. Note on the onions since I added them at the beginning some did dissolve into the mixture, so there wasn't really much pieces of onion. You can always start out with your meat, broth and mushrooms and then at around the 4-5 hour mark add in the onion. I will probably do this next time. But either way it was delicious.

I am really loving my crockpot. I don't know why I have never cooked with one. I really regret getting rid of my old one that my mother in law had bought me, it was a very large one and I never used it because I thought it was too big to cook in. I think when I find the larger one I will be buying it. The one I have now is inbetween size. It's a good size but if I was really wanting to do a large meal the bigger one would be better.
